Can anyone tell me where you embark at in New York and what time you are allowed to Embark?

Boarding starts around Noon.

Have you ever traveled to Quebec from Princess that includes the overnight stay in Quebec?

 

I'm curious how that works. Do they let you come and go freely that entire night or do you have to be back on the ship at a certain time?

When we went........

Yes you can come and go as you wish. The gangway was manned all night. ;)
