I know with the insurance you can cancel without penalty? As well as a full refund correct?

What I am not sure about is if we need to post pone because of medical reasons or due to inability to get time off from work will they allow us to use the money paid towards another sailing at a later date?

You can cancel for a full refund if you cancel for a covered reason. Most policies cover medical reasons. However, cancelling for work reasons could vary by policy. You would need to check the policy closely.
