you don't mention who you are sailing

but a search of less that 5 minutes found this excursion from RCCL

Catamaran Sail & Snorkel - GCC6

Sail away on a luxury catamaran to the glorious reefs of Grand Cayman for a day of underwater adventure. Grab your gear and jump in to view some of the most active reefs in the Caribbean along the exquisite Seven Mile Beach. You'll snorkel through two separate reefs full of colorful fish and bright coral and even see the shipwreck of the USS Kittiwake. On the way back to shore, sunbathe or enjoy a tropical cocktail from the cash bar.

Highlights:

• Luxury Catamaran: Enjoy a comfortable and scenic sail along illustrious and gorgeous Seven Mile Beach.

• Two-Stop Snorkeling: Explore Grand Cayman's underwater world at two reefs including the wreck of the USS Kittiwake warship.

I'd note

trips to Stingray city leave from marinas in north sound ....

any trip that says "seven mile beach" stays on the south side .... there is NO boat tour that does both .. not enuf time . . . you must go AROUND the island to get from one to another (or take a bus and change boats!)

Red Sail has a new one that leaves from Seven Mile Beach, so doesn't include Stingray City. There was an article about it in today's paper.

Not sure if the times would work for a cruise ship visit, but since it's a brand new tour you could always contact them, see if they'd be interested in running it earlier.
