The chef said they were still in the testing process and would have a lot to figure out (money/amounts/etc etc). You will get an invitation in your stateroom that details when and where the Chef's Table is being held. When we were on the Conquest a few years ago we met in one of the lounges around 6:30-7pm and it lasted a few hours. Yes, the chef or assistant chef will come to your table the night before and ask if there are any dietary issues, allergies, dislikes, food choices, ect.. One hint is that if you don't absolutely love your first bite of a course, set it aside. By the time the last three courses were served I couldn't eat another bite.
