Last cruise I discovered a cocktail with Spiced Rum in it...I thought it was a rum runner or Dark n Stormy but not sure. It was from the Ensemble Lounge menu so hopefully will still be there next week aboard Solstice! But liking the sound of some of the above, including trying out the World Class Bar!

Well, if it was a Dark & Stormy -- that's an easy one. Just pour 2oz Gosling's Black seal rum and 4 oz of ginger beer (Gosling is best, but Reed's Extra Ginger Brew is also good) over ice, in a highball glass. Garnish with a lime wedge. You can also squeeze a few drops of lime juice into the drink -- but, not a lot -- and no muddling, please. ;)

The best dark(aged) rums are ones that can be enjoyed on their own, with maybe a single ice cube to help open up the flavor. The best silver(white) rums are ones that aren't too sweet(no sugar added back to them after distilling) and can be a reasonable substitute for vodka, gin or tequila in a cocktail.

My favorite dark rum cocktail on the ship is definitely a Dark and Stormy, but I prefer a stronger ginger beer like Fever Tree or Regatta over Goslings(I make my own at home using Pickett's #3 Hot and Spicy Ginger Beer Syrup and seltzer). I also like a good white rum in a Dark and Stormy as well(the rum version of a Moscow Mule).

When I was very young I used to drink rum and coke. Then, I heard about a rum drink called a Zombie. I would go to various bars and none of the bartenders knew how to make it. One day we were on a vacation in Florida. I asked the waitress if the bartender could make me a Zombie. She said "he will if I ask him to" - very funny. Anyhow I'm drinking my second Zombie and the wind started to pick up. Lighting and thunder and then the power went out. I could not drink a third. See below for the ingredients:

1 part white rum

1 part golden rum

1 part dark rum

1 part apricot brandy

1 part pineapple juice

½ part 151-proof rum

1 part lime juice

A slice of pineapple and nutmeg ground on top. We found the pool bar made a great one but had to explain the recipe. They don't have cream of coconut so you have to accept pins colada mix and they stopped sticking pushers too so have to accept another dark rum
