I didn't realize how many options there were in Cozumel that were so similar. With that being said, my husband and I will be there in September with an 12 and 8 year old. Out of paradise beach, Mr. Sanchos, Playa maya etc which would offer the best activities for kids? We aren't opposed to PAYG or AI just wanting a fun experience for everyone. I know how subjective this is, just trying to narrow all the options down. Thanks!

You can't go wrong on any of those. But IMO, for kids the ages of yours, Paradise Beach at $3 pp entry and then $18 for each person wanting the water activities, would be a good way to go.
