I certainly don't think that beginning with a salad bar helps the line move. I didn't find the food 'special' nor attractively displayed but perhaps others did. My patience had expired so I am not the best evaluator. However, I suspect that many found the experience [in the galley] very interesting...plus tons of folks love buffet offerings.
