Hard to know what to say without knowing what time you dock. However this question has been asked multiple times so I think a search of the board would give you an answer.

It's about 20-30 minutes in a taxi to the airport. Usually you're advised to be at the airport 3 hours ahead for long-haul flights.

 

So add that time to the time you think you'll get off the ship, and you have the earliest time.

We always book something after noon so we're not stressed out, but you can carry your luggage off the ship soon after the ship is cleared, so you could conceivably get an earlier flight. If you choose to carry off your luggage, you have to be able to do it on your own and if you have to help your mother, that could be a problem.
