QM2 has daily Catholic Mass on every sailing, except on turn-around days.  In general, on sea days these are in the morning in Illuminations and on port days in the evening in Connexions.

 

QE and QV has a Catholic priest on board only for Christmas and Easter.

 

Catholic priests on Cunard are arranged by Compass Speakers, Religious Service Leaders.  The updated Cunard web site doesn't have this information but appears to still be the case according to the Catholic Travel Guide.

Excellent summary by BlueRiband. All I have to add is that on Saturday sea days during QM2 voyages, the Catholic Mass is often scheduled as a "Vigil Mass" in the late afternoon (typically 5:15pm) in ConneXions.
