We have sailed on other cruise lines but never with Princess. We are doing the British Isles cruise in June 2020.

Can you tell me how the IC works? If I order a Latte and a cake the latte has a cost and the cake no charge? Is that correct?

You are correct;  everything at international cafe is free;  it is located next to the coffee bar;  they are connected; but the lattes and coffee's you get from the barista will cost you.  Some people buy coffee cards for their cruise.

Someone correct me if I am wrong, I believe there is a charge for gelato.

Correct, but on the Regal gelato isn't at the International Cafe, rather it's across the Piazza at the aptly named Gelato
