I have a cruise booked with 2 friends in one stateroom. We have purchased the insurance offered by NCL. My question is this... should one of us have to cancel can that person be refunded their money thru the insurance and the other 2 still be able to cruise without having to pay more?  TIA.

For all cruises through October 31, 2021, you can cancel up to 2 months before your sailing and receive a full refund under NCL's modified cancellation policy. After October 2021, NCL's normal cancellation window is four months before your cruise vacation. For cruises through October 2021, cancel 15 days prior to vacation start for a full Future Cruise Credit.

NCL is buying an insurance policy for you from a commercial insurance carrier. If you cancel for a non-covered reason within the cancellation penalty window, the insurance will not cover your cruise fare. The insurance will only pay for covered reasons. HOWEVER, NCL will give you a 75% future cruise credit for cancelling for a non-covered reason (where the insurance company has denied your claim).

The remaining two people in the cabin should not owe anything addition due to the late cancellation.
