Pre-booking excursions?

We're on the Elation 5/14 sailing and were told we could pre-book our excursions online. For the entire cruise, there are only 2 that are listed that I can "purchase" now. Do they add more closer to the sail date, or how does that work? I don't want to miss out on the ones that we absolutely know that we want.
