Specialty Dining Question

We were recently on the Explorer, which we loved. We were in a concierge suite and had no problem booking multiple reservations in our favorite restaurants.

All of our reservations were made in advance at the Concierge reservation desk. I am wondering if it is possible to show up without a reservation at the specialty restaurants and get seated, if space is available, or must you make advance reservations always.

Pre Covid we checked and sometimes were able to be seated either at a 2 top or a 4 top with another couple who were willing to share. But no guarantee though.
