Switching dining times

It's been a while since we cruised.  Just booked an 8 day out of Baltimore on  Enchantment on 12/1/22 and all that was left is late (7:45!) dining.  We tend to be early birds. I waitlisted us for MTD because early was very early (5:15 and also waitlisted).  We are both vegan so I'm thinking that it will be easier to dine in the MDR.  Any feeling on how easy it is to switch dining times these days?  I presume we need to wander over and speak to the head waiter as soon as we can.

Don't "wander" as soon as you get onboard go to the MDR and make your request.  That's what we did in July on Navigator and it was still an effort to get changed.
