Will they show the fotball matches in the Champions League now in February onboard the fleet cruising in the Caribbean?

On ships with a venue with multiple TVs (like Playmakers), probably. The rest maybe, on ch 21 or 22 (the sports channels).

We were on Oasis in October out of New Jersey and they showed the English Football League whilst on it. Playmakers has multiple screens and at least one was showing football, if its not ask and they will accommodate you.
