Vigo, Spain - kayaking or any excursion advice

We are booked on a cruise stopping at Vigo, Spain. There aren’t a lot of shore excursions options. What do people recommend? The kayaking the Minho river looks interesting - has anyone done this? Are there good views or not really?

One of the main shorex from Vigo is likely to be to Santiago de Compostela. (The other port most commonly associated with S de C tours is la Coruna).  You could  find a trip to S de C is more interesting than you might initially expect, but it would be in every way totally different from kayaking.
