Are we allowed to bring one bottle of wine (750 ml) per person?

I thought I read something but I could not find it anymore. I already purchase a good bottle of wine, and would like to bring it on board next week, on the Majestic Princess departing from Sydney,

Yes, you are allowed. You should be able to find it in your passage contract for your booking on princess.com.

It all depends on your waiter if you'll be charged or not. Last cruise we brought multiple bottles to dinner and were never charged anything.

In the old days we used to offer a half glass to the head waiter and never got a corkage fee. Now with the packages we no longer carry on wine
