How soon can I bid for an upgrade?

Do I have to wait for an email inviting me to bid for an upgrade, or is there some way that I can go ahead and bid before that?

If you pull up your reservation in the NCL app on your phone, you should see a tile that says "Room Upgrades". That will take you to a screen where you can enter your last name and reservation number to see if you are currently eligible to bid on an upgrade.
