Specialty Dining

First time on Edge Class, only 2nd on Celebrity.  We are only really interested in one specialty dining reservation. On RCCL, we have found that they offer better dining packages/offers on embarkation day. Is that true for Celebrity as well? Are we better off buying ahead or waiting until onboard?
