Specialty Dining Cancellation

Odd situation, I'm looking to make a booking but it will only let me book for one person. I'm tempted to book and sort it out onboard, either cancel for refund or add a second person, I can't for the life of me think they only have a table for one available? has anyone come across this situation before and does my plan sound OK?

Are you sailing solo then it will only allow the guests in the room, or if not just click on the 2 names in the room to highlight them unless that's not working.  You can also call to get it sorted out and not wait to onboard and maybe the time gets filled etc
