We stayed at the Fairmont Waterfront. It's directly across the street from the terminal. There's more than one Fairmont, so be sure to specify Waterfront or you may end up out by the airport.

Vancouver:

Pan Pacific, Fairmont Waterfront and Sutton Place are 5* IIRC...Westin Bayshore, Sheraton Wall Centre, Marriott Vancouver Pinnacle are all 4*... and less expensive but very nice properties.

 

IMO for the money Westin Bayshore is probably your best bet...plus, on Priceline you can usually get rooms for $70-$95/night if you're looking for a bargain (make sure you register with their Starwood Preferred Guest program for more perks).
