RCCL Freedom schedule and local time?

Hi all:) I am trying to book a dolphin swim. I heard that there may be differences in time btwn the cruise ship and local time. I just called Dolphin Discovery and they told me they use Central time. However they told me each shp or cruise line varies what time they use. The intinerary shows us docked 7AM-4PM. I want to plan a royal swim for 12 Dicoveriy's time, do you know if the ship time would be the same or different?

Freedom is on Miami, Eastern time the whole cruise...

 

OK so how does that work. We are docked 7AM-4PM. Is that going to be eastern or local (central) time. I called RCCL and they said the times posted would be local Cozumel time....but you know how that goes sometimes:confused: That also means we would have to reset our watch to local island time to be back on the ship on-time...is this correct?
