I worked at a buffet place in college and can not bring myself to eat at one since. What was leftover from Monday went into Tuesday, Tuesday into Wednesday and so on. Leftover bacon and sausage were alway used creatively. I went so far as to ask the manager if the food was even safe after sitting out so long, reused and reused all the time. What I noticed on the Jewell in May is the waste from the overloading of plates. I would think that and the food from the buffets that eventually has to be thrown would eat into the profits. Do you notice that not many buffet style eateries exist like they did a decade ago. That should be an idication that perhaps they are not all the profitable.
