Paradise beach and....

Okay if we are arriving on the Carnival Paradise will we have time to go out in the evening after dinner too? We leave at 11 PM right? Or do people just stay into the evening there? I am especially looking for a fun place to take my 19 year old. Is Carlos and Charlies THE place or are there others?
