Best Rum Cake?

We bought the Tortuga 6 pack of minis and I tried all 6 flavours.

My favourite was the original.

 

Having said that, upon our return from our trip my MIL had a homemade rum cake waiting at our house for us to eat! It's the best!!!

I like Blackbeards best (which seemed to have a little less rum flavor than Tortuga did) - banana was my favorite.

 

Picked up a few rum cakes (small one's) when we were in Nassau on our last cruise - brought them home - and unfortunately my dog found them - and ate one of them. Jan

I purchased a sample of 6 small ones. Each is better then the last.

 

I picked them up at the "factory" and was somewhat disappointed because the ship price ( Carnaval Miracle) was only $1.50 more and there was no factory - only a retail outlet.

Although I've never tasted an authentic rum cake, this is AWESOME.

 

ALMOST TORTUGA RUM CAKE

Cake

 

1 (18 ounce) box yellow cake mix

1 (3 3/4 ounce) box jello instant vanilla pudding

4 eggs

1/2 cup cold water

1/2 cup vegetable oil

1/2 cup Bacardi dark rum (80 proof) (flavored rums work REALLY well...coconut for the cake and pineapple for the glaze :D )

 

Glaze

 

1/2 cup butter

1/4 cup water

1 cup granulated sugar

1/2 cup Bacardi dark rum (80 proof) (see note above re: flavored rums)

 

 

Cake: Preheat oven to 325 degrees.

  1. Grease and flour a 12 c.
  2. Bundt pan.
  3. Mix all cake ingredients together.
  4. Pour batter into prepared Bundt pan.
  5. Bake for 1 hour and cool completely.
  6. Make the glaze while cake is cooling.
  7. Glaze: Melt butter in sauce pan.
  8. Stir in water and sugar.
  9. Bring to a boil for 5 minutes stirring constantly.
  10. Remove from heat.
  11. Stir in the Rum.
  12. Invert the cake onto a serving plate or cake stand.
  13. Prick the top of the cake with a toothpick to allow the glaze to soak in.
  14. Drizzle and smooth the glaze evenly over the top and sides.
  15. Allow the cake to absorb the glaze.
  16. Repeat until all of the glaze is used up.
  17. (This will take several applications).

The cake is really easy to make. The glazing takes a bit of time, but what I do is put the cake on a wire rack, and just place it on a plate. Pour the glaze over top, pick up cake on rack and place on another plate. Scrape off leftover glaze back into pan. Repeat. Switching back and forth between the 2 plates. That takes a bit, but it's WORTH it. And if you can make it a day or two ahead of time, the rum REALLY soaks in and it's AWESOME. I also toast a cup or two of chopped pecans and place them in the bottom of the bundt pan before pouring the batter over top.

I purchased the Turugo 6 pack at a store close to Senor Frogs (deli market type place) for $20 american. We just ate the original one and it was awesome, perfect size for gifts!. My sister went to buy it on the ships duty free (RCCL) and it was more expensive but with my receipt they matched the price and we bought 2 more packs. Something to keep in mind if you miss getting it you can borrow the receipt of someone else and still get the good deal.
