Brilliance Cruise May 19th

Havent seen many posting about May 19th Brilliance cruise. Our first time going to Europe, etc. Never been on 14 day cruise. What is the secret on saving money as all the excursions offered from the ship are so expensive? Has anyone taken private tour and had problems getting back to ship on time? How reliable are these tours? How to decide as so many choices of sites to see. And, how to pack for 14 days? Gosh i am overwhelmed before even start, Help!
