If you go to Vacations To Go (there's a link at the top of CC), then click on the Cruise Lines link, you can see the ships in each fleet and get a summary of it with a whole lot of info, including maximum occupancy per room.

That I know of, Disney, the older Carnival ships, NCL & RCI all have cabins that can hold five or more people.
