Coming 1st week of March 2008...need suggestions

We are coming to Grand Cayman the first week of March 2008 with at least 2 other couples.

 

We are planning to stay in the Rum Point area (possibly renting Conquered Fame).

 

What recommendations do you have for activities? Our obvious choices are:

1) Relaxing on the beach at our house, in Rum Point, on Seven Mile Beach

2) Swim with the Stingrays

3) Possibly Fishing Charter

4) Visit to Hell

5) Sunday BBQ at Driftwoods

 

Any must hits for dining? We like to visit "local" places, not just the tourist traps.

Try the Kaibo...it's got good food and great atmosphere.

Dining

• For local fare make a stop at Miss Viveen's Kitchen in Gun Bay. She serves traditional Caribbean dishes, mostly to island residents.
  
• Portofino in Gun Bay has a variety of dishes from Italian and Indian to seafood.
  
• The Lighthouse in Breakers offers excellent dining and a nice selection of wines.
  
• Most unique of all is Roland's Garden in Cottage. It is not a restaurant. There is not a menu. He does not have a liquor license, but encourages his friends to bring their own. What he does do supremely well is serve up a five course dinner of the chef's own choosing. He invites his friends to dine in his garden and appreciates it if they leave behind whatever they feel the meal was worth.

Activities

• Scuba diving is excellent in Grand Cayman. Take a one day Discover Scuba Diving Course from almost any dive center and experience the underwater world.
  
• Visit the Queen Elizabeth II Botanic Park in North Side. Walk through the beautiful gardens and catch a glimpse of the uniquely Caymanian blue iguanas that make the park home.
  
• Have a historic day by visiting Pedro's Castle and the Cayman National Museum.

Question on Roland's Garden...how much money should someone expect to leave for Roland?

 

As stated, it is a five course gourmet meal. Wine or other alcohol is up to you. Leave whatever you feel the meal was worth.

 

Reservations are mandatory. Call at least 24 hours in advance. After all, wouldn't you like to know how many of your friends are coming over for dinner?
