We received a copy of the recipe upon departure, but have not tried them yet. Any tricks or alerts that we should be aware of (especially since we don't have a pasta maker!)? Simply make the easy dough, roll it out and cut the desired strip's with a sharp knife~~it looks fairly easy but I haven't made them. You can hand roll the, but it is a real pain. You can get a hand crank pasta machine for $15-20 - well worth it. My dinner guests are so impressed.
