Yes you can. Actually, it's the preferred way of booking the butler. You may change your mind about the cabana during the trip, etc. Just let the shore excursion desk know one you have decided.

We booked the cabana in advance and didn't book the butler until we were on the ship. When we arrived in our cabin, we found a pink envelope with cabana info (and a form requesting choices for soda/pop and shoe size info). Also included was a form for upgrading to the butler package (with all that info). We turned both forms in and charged the newly added butler package to our shipboard account.
