Eggs Benedict

One of the things that a ship will loose points on when the Vessel Sanitation Program people inspect the ship is if they find eggs being served that are not thoroughly cooked. Whenever a ship is in any U.S. port, there is always the possibility that an inspection could occur. Therefore, the chefs would be wise to only serve those egg dishes in which the eggs would naturally be completely cooked.

 

It sounds odd, I know, but it is true. On the Sitmar Fairwind a number of years ago, there was no toast available for breakfast the final morning of the cruise when we were docked at Port Everglades. The reason: an inspection was going on and the inspectors saw that the staff doing the toasting of the bread were not wearing plastic gloves, and shut the toasting operation down!
