There's already so much to do on a cruise, why hassle with a guitar? Plus, I don't think a large guitar with a case would fit in an overhead without taking up all the space for the other passengers. (Only "small" musical instruments may be carried on-board, defined as, "meet existing carry-on size requirements". The typical guitar case measures 72 inches, the way airlines measure things, and the limit is 45 inches.) Professional guitarists who travel by air sometimes make arrangements to purchase a seat for their guitar. Barring that, you need to face the prospect that it will have to be checked, even perhaps at the gate, and therefore subject to all the potential damage that that implies ("due to their fragile nature [the airline] does not accept liability for damages and has limited liability for loss").
