It is $250 for solo travellers for a 7 day cruise

No you have to pay the $500. Your cruise is 200% as if paying for 2 people. So you have to pay the full $500 deposit. Or this is what my friend had to do.

In my 14 carnival cruises the majority were solo. I have never had to pay $500 deposit. It has always been $250 (unless it was a 5 day cruise then it was $100 or $150). Also, as a solo cruiser I haven't paid 200%. I only pay "fees and taxes" for 1. If I book a 1A then the charge has been only about 130%. Too bad I like balconies...

Same here...never paid a $500 deposit. As a frequent solo cruiser my deposit as always been $100, $150 or $250 depending on the length of the cruise. I've never paid 200% either.
