Last night extra tip question

Normally on the last night of sailing people will (if they are doing it) hand over individual envelopes to the wait staff. Room stewards (for us) always receive on the last morning.

 

Back to the wait staff. On our cruise the last night port times are 7-midnight and since we have the late seating, we won't be eating in the dining room that night. I'm sort of bummed in the first place that we'll miss the last night's meal. We always really enjoy that. But I also have never been to Butchart Gardens and want to go there and if we wait for our dinner to be over there will be no point in going at all.

 

Now this might sound like a no brainer but when's the best time for us to give them their extra? Would we do this the night before the last night? Seems to me yes, but I wondered if this was the best approach or else slip into the dining room before we leave for our excursion the last night and give it to them then.
