LibertyBelle Posted December 2, 2004 #2 Share Posted December 2, 2004 Funny you should ask... I just found my cookbook from our cruise today ;) Here goes: 4 cloves garlic 3 tablespoons fresh lemon juice 6 anchovy fillets, drained; or 2 teaspoons anchovy paste 2 tablespoons dijon mustard 2 teaspoons worcestershire sauce 3 large egg yolks Salt to taste 1 cup (250ml) extra virgin olive oil In a blender, combine all ingredients except the oil. Blend until smooth, about 2 minutes. With the motor running, slowly add the oil. Adjust the seasoning. Transfer to a container. Cover and refrigerate until ready to use. To assemble: 3 Tablespoons extra virgin olive oil 1 cup (140g) cubed crustless sourdough bread Salt and freshly ground black pepper to taste 2 Heads romain letuce, washed and dried 1-1/2 cups (210g) shaved or grated parmesan cheese 1. Preheat the over to 375 degrees F/190C. Coat a baking sheet with the oil. Add the bread cubes and toss to coat. Season with salt and pepper. Bake for 8 to 10 minutes, or until golden brown. Transfer to a plate lined with paper towels and drain. Reserve. 2. Tear the romaine lettuce into bite-size pieces and place in a large salad bowl. Add just enough ceasar dressing to coat the lettuce. Divide the salas among 4 chilled plates and top with the parmesan and croutons. Serve immediatly.
