RCI Drink Package Questions - for AUS cruise departures

Am considering a RCI drink package and just had a few questions.

This would be for cruises departing from Australia (so keeping in mind that the drink menus are priced higher than normal, as they include a gratuity).

Ultimate Beverage Questions

For the Ultimate Beverage Package, it lists limits as up to US$12 per drink. This is based on US sailing menus drink prices where the menu price does not include gratuity.

For sailings from Australia, menu prices are increased so that they include a gratuity of 15%. Does anyone know what the per drink limit is for sailings out of Australia?

Does the per limit drink apply for beers, wines and cocktails?

With the Ultimate package, if you choose a beer / wine / cocktails above the included drink price, do you pay just the difference or the whole amount of the drink costs?

I think the AU drinks price limit is $14, and that should cover all cocktails, beers, wines by the glass but maybe not top shelf cognacs and single malts. I can't recall having to pay any extra for drinks.
