Ok so they are both a ribeye.
Not sure why they don't just say bone-in ribeye instead of calling it a rib chop but whatever.

How do we get back any unused balance on our s&s that was applied from a carnival gift card?

Online check-in, is it like with the airlines that you want to check in at 12:01am so you can get the best/earliest boarding time?

Does the port vs starboard side really matter? Why? I'm in 2353 in the Horizon and based on luggage tag that's starboard. Also I'm under the dining room midship so that should be quiet after 10pm?

If you don't want to do it online, you can put a CC down when you get to the port. Holds are a bigger deal if you are using a debit card, because depending on your bank they can take awhile after sailing to fall off, which ties up your cash.
If you put a CC down you can pay your account off in cash at the end of the cruise.
Or, if you REALLY don't want an onboard account, you can probably prepay gratuities, and just not spend a dime on board- it probably isn't very common, but it is doable.
I believe my gratuities are being prepaid, think was like $111.00 of my balance was for gratuities.
I'm getting cheers and with the exception of 1 dinner at the steakhouse and maybe a lobster roll I don't really see myself spending any money on the ship, ports are a different story lol. But with this being my first cruise I could be completely wrong in that opinion. Guess time will tell.

Since I'm going with a friend I assume we have separate/individual sign and sail accounts so we can link our own cards to instead of it being room based charges.

If you link a credit card to your account, you do not need to put down a cash deposit.
This makes sense, when do we provide the card we want attached to our sign and sail? I believe my deposit was paid with my debit card and like you mentioned I do not want that linked in case of a problem, hold etc.

The sign n sail card is what you use on board to pay for things. IF you don't give them a credit card number then you need to add cash to that card.
My understanding was that you settled up before you got off the ship by either cash or credit card.
Linking a credit card would be ideal for me but I heard today we had to put a deposit down no matter what.

I looked at the current menu and except for the specific port specials the menu is basically the same in the same order from our 2017 cruise. looks like they added a few deserts ( pot de crème). I am not complaining I am really looking forward to the root vegetable pie but I did think it would be slightly different. I am one of those weird people who prints out all the menus, fun times, 5 tab spread sheet. My teenagers on the other hand don't even want to know what the pre stay hotel looks like till we get there.
Are you able to print them out before boarding? I'm weird like you lol.

Last major change was switch to the American Table menu that started rolling out in early 2016 and took a couple of years to reach the entire fleet. There were lots of complaints about this new menu and they have been tweaking it ever since. The menu on the Conquest has probably not changed much from last year. They did recently bring back Baked Alaska that is served on the last night.

We just got off the Valor last week. One morning our group of 12 went to the dining room for the sea day brunch. We brought 6 bottles of champagne with us to have mimosas. The waiter had no problem with us and went to get us juice. A few minutes later he came over and said that his boss had told him that he needed to charge us $15 per bottle. Needless to say we passed and just took them up to the Lido after breakfast and enjoyed them there.
Are mimosas not included in the cheers package? This answer will determine if we carry on champagne or not

We're not sure what we're looking for other than non chain places unless its some local only to the area chain and less than $100 per person, other than that we are open to any great suggestions anyone has.

We're staying at the EB by the airport but are fine taking an uber to downtown, south beach etc for dinner.

We almost booked with a ta that would have given 750 obc but I became leary after seeing some reviews online and opted to book with carnival directly.

So if they now offer a $50 OBC but the price of the cabin is actually $75 more, you would actually lose $25. You can't just add the OBC without adjusting the cruise fare to the current rate.
When I originally booked it was higher but I had the rate adjusted down a few days later and the price has remained the same since. So if I go for the obc would I lose money because when i 1st booked the rate was higher even though I've had it adjusted to match the same rate that now also has an obc?

Thanks for that, although if didn't mention rib chop I did learn that my favorite steak as a child a Delmonico is just another name for my favorite steak as an adult, ribeye.
I always wondered why only the special butcher shops carried Delmonico steaks and the restaurant's didn't lol.
