Probably better chance on a Cunard ship, or maybe another European cruise line.

We always see couples dancing in the Ocean Bar - hard surface dance floor, danceable music for the more formal steps, hold your partner type dancing if this is what you mean by "ballroom dancing".

The Ships with the remodel of Music Walk such as Zui there isn't any ballroom dancing! On Kdam there was an Afternoon Tea in the Queens Lounge on one of the days where the Band played and people danced. The smaller Ships that haven't had the remodel and still has The Band playing in Ocean Bar you will have some dancing.
