There are restaurants that only serve Sunday lunch and are not open at night for dinner. You can certainly visit San Marco Square with the Doge Palace and its "Secret Itinerary tour. Churches may have services on Sunday but then may be open or you can visit them on Monday. The Scuola Grande di San Rocco with Tintorettos life work on ceiling and walls is open every day. I did not check the closing hours for the Guggenheim or the Academia museum but all of Venice is sooo interesting that I am sure you will find things to see and do.
