Thanks Linda If you are referring ot the Flourless Chocolate Cake they serve as part of thetriple chocolate dessert, I can get it for you when I get home . .I have the Royal Carribean cookbooks and have made the cake several times . . . This is the cake served inthe specialty restaurants, but my friend has tried 2 other recipes, but they weren't the same; that's why I was asking if maybe there was another recipe. Linda That has to be the the Chocolate Flourless Cake. I asked them in the Specialty Restaurant if that was it and they said yes. Alexis Posted October 6, 2010 #7 Share Posted October 6, 2010 Newest cookbook recipe. 3/4 cup semisweet chocolate chips 3/4 cup unsalted butter Preheat over to 300 degrees Place butter and chocolate in the top of a double boiler and set over 1 inch of simmering water. Whisk until chocolate is smooth. Set aside to cool, stirring continuously. 4 eggs 1/2 cup of sugar 1 Tablespoon dark rum 1/2 Tablespoon vanilla extract 1/3 cup strong brewed coffee Using an electric mixer beat eggs and sugar until creamy. Gradually fold into chocolate mixture. Add Rum, vanilla extract and coffee. Mix well. Bring a kettle of water to a boil Pour mixture *into a prepared 8-inch pan or individual molds and cover with aluminum foil. Place in roasting pan and pour in enough boiling water to come halfway up the outside of the pan. Bake for 30 minutes or until a skewer inserted comes out clean. Remove cake (s) from oven and allow cooling to room temperature in pan. Transfer to wire rack and chill over night. * I do not see anything in the recipe about how the pans are to be prepared other than in a water bath? I know that both of the old recipes called for buttering the pan. Chocolate Waffles ¾ cup semisweet chocolate chips Bubble wrap Garnish Whipped Cream For chocolate waffles, place chocolate in double boiler and set over 1 inch of simmering water. Whisk until chocolate is smooth. Spread over bubble wrap and allow to cool. Refrigerate for 1 hour. Remove bubble wrap and cut into triangles. Cut cake as desired if necessary. No, and I would give anything to get it. I never saw the cake on my last cruise and I was disappointed. It may have been served on formal night when we did not attend the main dining room? Being a tidbit pack rat, I went through my computer "food saved" and found it. EDIT: I erased the website in case it was not allowed on here. It really had nothing to do with the recipe. I have no idea if this works as I forgot I ever had it until you just asked. :confused::confused: There is an ingredient that one must find to make it. I would suggest calling or asking a bakery if it can be substituted? from the web. Sugar Free Coconut Layer Cake Recipe Adjustment I have a recipe of a cake that I had on a Royal Caribbean cruise. I was assuming that since it said sugar free, that is was fine for me to make for myself. Does anyone think there are adjustments to be made? I've never heard of this spa layer cake and muffin mix, can I just use a regular box mix? SUGAR FREE COCONUT LAYER CAKE. Recipe for 1 Cake FOR THE SPONGE: INGREDIENTS QUANTITY Spa layer cake and muffin mix (vanilla) 1lb. 14oz ?? Whole eggs 9oz Oil 9oz Water 9oz METHOD: 1. Mix Spa layer cake and Muffin mix, Oil, whole eggs and Water for 2 minutes on medium speed. 2. Add water and mix for 1 minute. Scrape bowl and paddle. Mix for 2 minutes on medium speed. 3. Put in cake moulds and bake at 375degrees F for 25-30 minutes. FOR THE CREAM: Whipping cream 1 quart Equal sugar 2 to 3 oz (to taste) Malibu coconut rum 1 floz Slightly roasted desicated coconut 1 lb 1. Whip cream, sugar, Malibu in a mixing bowl until firm 2. Cut the sponge into 3 equal layers. 3. Apply cream between each layer of sponge and also on the top and the sides of the cake. 4.
