Stopping in Seattle on way to Fairbanks

We have a long lay over and are wondering if we in 8 hours will have time to go by train to Pikes Market walk around and then do the Duck tours on the way back to the airport.

Definitely ! It's 40 minutes by Light Rail from the airport to Westlake Center downtown, then a few blocks walk to the Market. The Ducks leave from Westlake or you can take the monorail up to the Seattle Center for their location on 5th. Just be sure to be back to the airport for the 1 1/2 hr or whatever your airline requires. Sometimes you breeze thru security and other times it takes a while.

If you don't have time to eat downtown, there are several good restaurants at the airport, including Ivar's Fish and Chips.

Yes, very simple. The light rail will cost $2.50pp. Get off at the West Lake Station, exit toward Pine St. turn left go past the MacDonalds, and keep walking for a few blocks. :)
