I can make a couple of recommendations in Huatulco.

 

If you snorkel, or just want to see the area from the water and enjoy a great picnic lunch, contact Hurricane Divers. Their All-Day Excursion is lovely, nice lunch, deserted beach, great snorkeling. Their website is http://www.hurricanedivers.com.

Going to Huatulco for another land vacation this winter. I love the area.

 

It depends how long you will be in port.

 

Hibiscus13 has given you some great options. Also go to tripadvisor and find the Huatulco forum under Mexico, Pacific coast. Post your question there.

Your day in Huatulco can be a water day, visiting La Crucecita a small town about 10mintes cab ride from the marina which is in Santa Cruz where you will dock. Can also do a tour inland and visit a coffee plantation .

 

Water: take a tour of the bays with stops for snorkeling off great beaches without any buildings and through mangoves. Or go to a beach in the town of Santa Cruz where the marina is located. They have beach clubs where you get loungses, under a palapa and beverage, food service. They will be vendors I am sure at the dokcs offeirng a package.

 

tour La Crucecita, a nice town with a zocolo with beautiful church with wonderful painted ceiling.Stop by the shops that do wool rugs with the loom out front. Lots of shopping, stop for a beer and snacks. Can be done by cab at port and catch a cab back to port when you are done. Very cheap.
