Port Distances

The ship doesn't actually dock on Rome or Florenece--but people take the train from the ports to the cities. In Venice, it varies by ship; we could walk to some places and take the vaporetto to others.

You're approximately 90 minutes away from both Rome and Florence. Venice, you'd be walking distance to where you could catch the vaporetto along the Grand Canal, or take the ships shuttle to St Marks.
Allow at least two hours each way to and from Florence and Rome to be safe and even that isn't a guarantee. Italian drivers are downright crazy and have lots of accidents.
