I have never sailed on this ship is there any difference from Sapphire and Emerald which are the 2 I have been on? Is it older and/or has it been restored.

The ship is closer to the Emerald than to the Sapphire. It was the first ship to have the Riviera deck with the extra passengers that the Emerald has, but the Sapphire does not.

The International Cafe was added in a refit, so there is no gelato there like the Emerald had. Likewise there is no Adagio lounge. On the Emerald all four aft elevators went to deck 6 and to Skywalkers. On the Caribbean, only two of the four do so.

The other differences are mainly where some venues are located such as Sabatini's.
