What do I NEED to get on-board?

Yes I am taking everything, but what is the absolute bare minimum I need to get on-board the ship? I am trying to determine what must be protected above all-else. From my documents, it looks like passports + boarding pass will do it.

passport and boarding docs is perfect, and thats the ideal documents to have

you will also need cash or a credit/debit card to fund your sail n sign account (onboard account)

You don't have to have a boarding pass if you have proper ID such as a passport card or book.

Your name(s) will be on the manifest.

funpass/credit card/passport. You can do it all at a kiosk with those three items very quickly, if you are at a kiosk enabled port.
