Found the answer to my own question so will post just in case anyone else is looking for the same thing. Cost Maya Tours offers tours to Chacchoben (3 hours) and 1 hour reef snorkel tours so we are able to do the ruins tour at 1100 and then snorkel at 3pm with plenty of time to get back to the ship.

Who did you book through for this?

As per my earlier post, it is Costa Maya Tours who has both. I haven't booked yet since we are still 5 months out. When I try to attach a link, it gets edited out. Their website is their name with hyphens after Costa and Maya.
