Please can anyone tell me when can I book speciality dining package?

Due to cruise radience in sept Hawaii to Sydney

Last yr did a TA in nov & I'm sure I was booking restaurants early???(1stcruise)

Not sure if it's different down under, but I can usually book dining about 90 days before the cruise.
