You will see a card on the hostess station with a picture and name of the dish. I couldn't tell you what the others were, they never really appealed to my palate. It varies by day and often relates to the port of call that day. ETA: if you had a great local meal at any of the ports, the chef's special will probably dissapoint. I remember that feeling a few times. And I'm saying that as a person that finds the MDR food often quite good.
