Adding drinks package/excursions after receiving docs?

Happily doing the doc dance today, however I still would like to add the soda package and maybe an excursion. Will I still be able to do this? Will my sea pass have the soda package logo printed or will I just receive a sticker upon boarding?

Yes, you can still add the soda package and excursions. I don't know when the cut off date is for havng a pre-printed SeaPass logo, but if you got your docs at 49 days, I would bet that you can still get the pre-printed logo.
