Is there anywhere where you can figure out what Sea Day weather will be like? Or is it just make a guess on what you think the ship position will be and find the closest corresponding city?

You can do that, the Captain also make daily reports. In the end it doesn't really matter. Nothing you can do about it so don't worry about it, just go and have a great time
